Goes bad if not used within 24 hours, but sounds like that shouldn't be a problem.

Third level clerics also have two 2nd level slots. Remember you can up cast for 10 additional gallons per level. So one cleric can create 10x4+2x20=80 gallons per long rest. Would seriously suggest looking into warlocks instead. A third level...
