The description claims the first few minutes have no content, but it's a great demonstration of diffraction spikes from what are clearly boats. Couldn't ask for a better visual debunking.
I haven't flown at those ranges, but the interference in the video is familiar to me from my quads with analog video transmitters. I think you're right that a fiber link would not have them.

I think I can abandon that idea, the FPV pilot on Reddit did a good job explaining that this is footage from the goggles, so there are extra links to add noise/interference, which I don't think we'd see if it was a fibre optic drone?
