Planes flight paths [aerial photography for mapping]

I have been following the chat in a telegram group about chemtrails. I am not a believer in them.
I wonder can somebody more knowledgeable about aviation tell me what the planes in these pictures are doing?
Things like this get posted in the group multiple times per day. Apologies if this has already been covered, I couldn't think of anywhere else to ask the question.
